Russia is well known for a large variety of recipes such as peasant foods, recipes influenced by Ottoman and Persian cuisine, and French-influenced dishes originated during the Czarist period when Russian nobility was greatly influenced by French culture.

Some well knew Russian food include:

* Borshch, which is a soup made from beets. Cabbage, potatoes or meat may optionally be added.

* Okroshka which too is a cold soup made from kvas (a traditional Russian bread drink). Black pepper, mustard or pickled cucumbers are used to flavor the dish. Meat, fish or vegetables can be used when making the soup.

Russian cuisine extracts its rich and varied character from the wide and multicultural expanse of Russia. With a combination of plentiful fish, poultry, game, mushrooms, berries, and honey, its foundations were laid by the peasant food of the rural population in an often harsh climate. Rye, wheat, barley, and millet crops supplied the ingredients for a plethora of breads, pancakes, cereals, kvass, beer, and vodka. Flavorful soups and stews centered on seasonal or storable produce, fish, and meats. Well into the 20th century, this wholly native food remained the staple for the vast majority of Russians.
